Comfort Foods For Dark Days




This is a Scandinavian (Swedish) dessert, which according to my book is called aeppelkaka med vaniljsaus (spelling?) which means apple pie with vanilla sauce. 

It's very easy to make and tastes really great, plus you won't need to buy any expensive ingredients.

For the cake, you will need:

5 apples, medium to large size
4tbsp sugar
lemon peel, rasped
3/4c flour
7tbsp butter
2 tbsp sugar extra

 Knead flour, 2 tbsp sugar and butter into soft dough and put into the refrigerator for about 25-30 minutes. In the meanwhile, peel the apples and cut into thin slices, place into a greased baking pan, layering with 4 tbsp sugar and lemon peel. Roll the dough out, cover the apples and bake the pie for about 25 min in a warm oven (+200*C).

While the pie is baking, make the sauce. You will need:
1 egg
2tbsp sugar
2 tsp  corn starch
1 3/4c milk
1tbsp vanilla sugar

In a small cooking pan, whisk together the egg, sugar, corn starch and milk, and cook on low till nearly boiling, stirring constantly. Remove from fire and add vanilla sugar. Keep in the fridge and serve together with the pie. Enjoy!

  1. Sounds good. But I have an easier idea: put a scoop of vanilla ice cream on a slice of apple cake that just came out of the oven. Presto - you have vanilla sauce on your cake, within seconds! ;)

  2. It's not exactly the same thing, as it will taste different, but of course, you can eat it with ice cream, too.
