It's vegetarian, and dare I say? Even vegan, but that's not the reason I baked it, it's easy, cheap and I had all ingredients on hand.
You will need:
1 1/2c flour
4 tbsp cacao powder
1tsp baking powder
salt
1c water
4 tbsp olive oil
lemon juice
1 tsp vanilla extract
1 big apple, peeled and sliced
1/2c sugar
cinnamon
Combine flour, cacao, baking powder and salt in one bowl. In another bowl, combine water, oil, lemon juice and vanilla, add to the flour mixture. Toss apple with cinnamon and sugar, then add to the batter. Transfer to a baking pan and bake at about 180*C for 30-35 min. Enjoy!
That's an interesting and simple recipe. I wonder if substituting part of the flour with coconut flour would still make it tasty enough. I've tried coconut flour, but it always seems to make stuff bland.

ReplyDeleteI'm not so sure about coconut flour because gluten free sorts don't really rise well. You could try spelt probably?
