The recipe was adapted from this wonderful magazine:
I used:
2 eggs
3 TBSP hot water
5 TBSP brown sugar
2/3c of spelt + white flour mixture + ab. 1/3c corn starch (must make slightly more than 1c together)
1/2 TSP baking powder
5 (small) pears
apricot jam to taste
Combine eggs with hot water and beat until foamy. Add sugar, then the flours + baking powder mixture, spoon by spoon and mix well. The dough will be thin, more like batter for pancakes. Transfer the dough into a greased baking pan of your choice. Peel and chop the pears, arrange on top. Cover the free spaces with jam. Bake at 190*C for ab. 35 min. Use the rest of the jam to spread on top the warm cake and let it cool. Enjoy!
