Happy Birthday To Me!




My birthday was actually some time ago and I baked this cake as a present for my beloved self:)

The recipe is a modified version of the one from Russian, Polish and German Cooking.


You need:

total 2c flour, I used ab 1c or a bit less white flour + 1c mixture of wholewheat, buckwheat, spelt and rye flour
2 tsp baking powder
1 1/2 tsp cinnamon
2 apples, cored, peeled and chopped
6tbsp butter
1/2c brown sugar
some lemon peel
2 eggs
+/- 3 tbsp milk

For the topping:

4 apples, cored and thinly sliced
lemon juice
1 tsp sugar (could be probably omitted)
3-4 generous tbsp warmed apricot jam

In a bowl, mix the flours, baking powder and cinnamon. Add chopped apples. Cream the butter, sugar and lemon peel together, beat in the eggs, add to the flour mixture. Add enough milk to form a stiff dough. Transfer the mixture into a round loose-bottom cake tin, greased and lined. Level it up with a spoon.

Arrange apple slices on top of the cake, sprinkle with lemon juice and sugar. Bake for ab. 60 to 70 min at 180*C, cover with foil to prevent apples from getting too brown. Cool for ab. 10 min, the glaze with the warm jam. Enjoy.
