If You Don't Know What To Bake For Easter

Try "Babka", a Polish cake.



The recipe comes from a British book called Russian, Polish and German Cooking, which I found at a second hand store. As usual, I modified the original recipe.

I used:

2 1/2c normal white flour (+ extra for dusting the work surface)
ab. 1/2c flour mix (whole wheat, spelt, rye, buckwheat)
1/2 tsp salt
2 tbsp brown sugar
1 tsp  dry yeast
8 tbsp butter
2/3c milk
2 eggs
1c raisins
grated peel from ab. 1/2 lemon
4 tbsp honey

Combine the flours, salt, sugar and yeast in a bowl.  Warm the milk + butter, add together with eggs, raisins and the peel. Mix into a dough, turn onto a floured surface and knead till smooth and elastic, ab. 10 min. Place in a greased round baking tin. Cover. I had to go away so left the dough in the fridge, where it was rising slowly for several hours. I then took it out and let rise in a warm place for 1 more hour. Flatten the dough so that it fits the tin, more or less.

Bake at 190*C/375*F. The book says for 50 min, however, mine was already too brown (as you can see) after 30 min. Check with a skewer. When done, it will also give a hollow sound if you tap on it.

Let the cake cool for ab. 5 min, then warm the honey and brush all over. Cool completely and serve with butter. Tastes really good:)
