Lunch Ideas: Salmon Pasta salad
You will need:
1/3 to 1/2 of a 500g macaroni package, cooked
1 can (ab. 300g) salmon, in chunks, skin and bones removed
1c frozen peas, thawed
1 mozarella, cubed
green onions, to taste
1-2 tomatoes, chopped
salt, pepper, herbs of you choice, to taste
Dressing:
olive oil
prepared mustard
dried parsley flakes
lemon juice (optional)
In a big bowl, combine the salad ingredients, toss. Drizzle over with dressing. Serves 4. The original recipe comes from some cooking magazine, I recreated it from memory.

Did you know that pasta is actually healthier when it is cooled (and reheateade) after cooking? Here all the health blogger are crazy about resistant starch nowadays.

ReplyDeleteSame thing with potatoes and rice. I nowadays always cook several servings of rice/potatoes/pasta and then just warm it. I do feel that it helps my blood sugar to stay balanced, though I do not have the blood glucose meter so I cannot be sure. (I am not diabetic, but I have reactive hypoglycemia, which means that if I eat high GI food my blood sugar will collapse in couple of hours. It is not dangerous but very unconvenient since I get very grumpy.)
ReplyDeleteSorry to hear about your health problems! I don't mind reheated pasta or rice, but I don't care that much for reheated potatoes (unless they are first cooked than baked) so I guess I'll have to take my chances:)
